Sodium nitrite (NaNO2) is a strong oxidizing inorganic compound in the form of white or slightly yellowish crystals that can absorb moisture from the air.

Industrially, it is obtained by passing nitrogen oxide gases through sodium carbonate or sodium hydroxide solutions.

•Strongly blocks the growth of lethal botulism bacteria (Clostridium botulinum) in meat products.

•Delays metal corrosion by creating a protective passive layer on iron and steel surfaces.

✓As a preservative and color fixative (E250) in cured meat products like sausages, salami, and bacon.

✓In synthesizing diazo compounds used in obtaining azo dyes.
